How to raise restaurant average ticket with a 3D menu

September 13, 2026 · 6 min

Average ticket rises when guests see the expensive dish before they order. How a 3D menu cuts hesitation and sells steaks, desserts and larger portions.

Average ticket does not rise with poetic menu copy. It rises when guests stop being afraid to order the expensive item.

In the dining room the fear is concrete: “will it be small?”, “is this really worth it?”. A dull photo and vague copy add friction. An AR menu removes the guess.

Where the money stalls

  • Signature dishes the guest has never seen in person.
  • Tall desserts with sauce that become one line on paper.
  • Portions for two that feel “too expensive” until the volume sits on the table.

While the waiter explains, the table orders the safe dish. When the dish appears at real size, safe stops being the default.

What to change on the floor

1. Feature the 3 highest-margin items on the digital menu — not all 30. 2. Put the QR in the middle of the table, not the corner of a stand. 3. Train waiters to say “you can see the size on the table, on your phone” instead of describing the portion.

PratoAI already separates featured items from the rest. Use that as the house window, not a phone book.

Numbers that matter

The useful conversation is not “innovation”. It is table time, waiter rework and dish mix. Rooms that show the dish at 1:1 report fewer portion questions and more orders of the signature item.

Start with one dish

Do not digitize the whole menu on day one. Pick the dish the floor explains most. Photograph it, publish it, measure orders of that SKU for two weeks. Then scale.
